Cottage Cheese Loaf

2 c. Cottage Cheese

1/2 c. Pecan Meal (can use any kind of nuts you like, chopped finely or ground into a meal)

2 c. Bran Flakes or Corn Flakes

2 T. Olive Oil

2 Lg. Eggs

2 Stalks Celery, finely chopped

1/2 to whole medium Onion, finely chopped

8-12 shakes Soy Sauce

1/2 t. Garlic powder

few shakes of Pepper

Mix all ingredients together in medium bowl.  Put in greased 9 x 9 baking dish.  Bake at 350 degrees for 1 hr or until browned and inserted knife comes out clean.

Note:  Cottage Cheese Loaf can be made with a variety of ingredients and seasonings.  Basically if you are a “dump-type” cook, it is a lot like meatloaf–in that anything can be thrown in.  I don’t think I have ever made it the same way twice, so try experimenting!
