Healthy Haystacks

Are you looking for a quick easy meal the whole family will love?

 This meal can be whipped up in 30 minutes or less and the options are endless.

I mean–just look at this spread!

Rice – white or brown (This will take the longest to prepare depending on the type of rice you choose, so make sure you start it first.)

Beans – black beans in this case (Canned is good–just warmed on the stove.)

Corn or Tortilla Chips

Cheese – any type you like, grated

Lettuce – chopped

Tomato – diced

Onion – diced

Pickles – diced

Olives – sliced

Banana Pepper Rings – from the jar

Salsa – mild, medium, or hot–Your preference!

Sour Cream

Ranch Dressing

(As we sat down to eat, one family member said, “The only thing missing is Avocado!” Of course all ingredients are optional according to what your family likes–as I said before, the options are ENDLESS!)

Since I am a vegetarian, there is no meat included in this version, but it wouldn’t be hard to add whatever type you like.

How to assemble:

First the corn chips…








Then, the rice and beans…








Next, add cheese, lettuce, tomatoes, and olives…








And finally, add salsa, sour cream or ranch dressing!








Mmmm!  Doesn’t it look great?

If you don’t like everything heaped in one pile, here is an option one family member used:








Beans and rice on one side, haystack on the other!


Pink grapefruit juice with a splash of cranberry juice poured in a fancy margarita glass–what can I say, this is a family friendly site!

 It is a beautiful bright pink Camellia floating in a pretty clear glass dish!
